Don't worry, it's not something that Bilbo's trolls would be planning to cook for Yule! It is just a hobbit-shaped pancake with ginger, for hobbits who love pancakes, also on Yule!Panfried Gingerbread Hobbit

I would like to share this special recipe in the name of my 6 year old niece.
She loves pancakes & wanted to know how gingerbread taste, so I made some
well spiced pancakes with ginger. Also, this recipe has the peculiarity to be
wheat free, lactose free, & low on sugar but in truth, they can be made
with any pancake mix that you prefer, as long you add generous ginger to give
its characteristic taste.
Ingredients:
4 spoons grinded ginger
1 spoon oat flour
1 spoon rice flour
1 spoon white corn flour
1 spoon coconut flour
1 spoon almond flour
1 spoon breadfruit flour
1 spoon corn starch
1 tablespoon sugar (or your favorite sweetener)
1/3 tablespoon baking powder
1 pinch salt (required for the baking powder reaction)
1 egg (can be replaced by egg substitute)
1/2 cup almond milk (or your favorite milk kind or milk substitute)
1 tablespoon vanilla
Assorted dried fruits (i used peach, pineapple, mango, raisins, cranberries, & blueberries)
1 spoon corn oil
Instructions:
Mix in dry all flours, corn starch, sugar, baking powder, & salt. Mix separately the wet ingredients milk, vanilla, ginger, & egg. Add the wet mix to the dry mix to make a uniform mass. Let it sit a few minutes to allow the baking powder to effect. Meanwhile heat the oil at the ironcast pan. Add the mass to the pan in the shape of a Gingerbread person. Decorate the top with dry fruits. When it starts getting a golden hue below, carefully turn the pancake to the other side, then let it finish cooking. Serve on a dish, & enjoy!
