For our fifth yule calendar surprise, we have our first recipe: clementine ginger marmalade! It's something good to put on yer yule biscuits, or maybe give as a gift for someone who loves marmalade. Like this bear over here who really loves orange marmalade and also knows how to make it!

Back to the clementine recipe, though! Clementines are in season from late November through January, and so they are also associated with the holiday season. Here is a simple Finnish recipe I found and translated for you (the picture and the recipe are both from the Yhteishyvä website.

 



Clementine Ginger Marmalade


1 ½ kg clementines

25 g fresh ginger, peeled and grated

330 g gelling sugar


Wash two clementines properly with water, zest them and put the zest into a cooking pot. Separate the peel and the pith from the pulp and cut the pulp into pieces. Put the pulp along with the juice into the cooking pot. Squeeze the juice from the remaining clementines into the pot as well. Add the peeled and grated ginger. Let the mixture cook on low heat for 10 minutes without the lid.


Add the gelling sugar and let cook for another 15 minutes. Stir the marmalade and put it into sterilized, heated jars and close with lids.
