Our 7th yule calendar entry comes from Yamy! She has sent us a festive recipe for yuletide. She comes from a tropical island (not the Girdley Island then, I think), where you can enjoy warm yule baths! And some cold drinks too, I bet. Here's a recipe for one by Yamy. Might be a favourite at the Shire pierates yule party! Arrr!
Coquito, a sweet & cold creamy drink!
Ingredients:
- evaporated milk
- cream of coconut
- coconut milk
- sweetened condensed milk
- rum (optional)
- vanilla extract
- ground cinnamon
- In bowl of blender, add evaporated milk, cream of coconut, coconut milk, sweetened condensed milk, rum (if using), vanilla extract and ground cinnamon. Blend on high until mixture is well combined, 1-2 minutes.
- Pour coconut mixture into glass bottles; cover. Transfer to refrigerator. Chill until cold.
- To serve, stir or shake bottle well to combine. Pour coquito into small serving glasses. Garnish with ground cinnamon and cinnamon sticks, if desired.
- A bit of other spices, chocolate or fruits can be added to give the flavor a personal accent.
